New Tradition

My colleague, Jeff and I are sharing a box of CSA vegetables from Rising River Farm. Recently we started a new tradition of sharing meals on the day that the veggies come in. Here is meal #2. Jeff brought delicious Spanish pork sausages. We grilled them (as two pork eating Jews) and made a
Russian salad:
cut up tomatoes and cucumbers into big chunks.
add garlic, salt, a lot of dill, some lemon juice and olive oil. mix it all up.
Easy couscous:
boil 1.5 cup water and add a splash of rice vinegar.
add some dried, chopped apricots and chopped nuts (I had macadamia nuts) and boil for 1 minute.
turn off heat and add 1 cup of couscous, mix and let stand covered for 20 minutes.
salt/pep to taste.
Veggie stew:
heat some olive oil in a pot.
add garlic and onions, cook until they start to smell good and look a little golden.
add chopped zucchini, cook about 15 min.
cut up some tomatoes into the zucs. The tomatoes will release juice.
cook on low heat as long as possible while you are preparing other dishes.
the longer the vegetables cook in their own juices, the sweeter and tastier they will be. stir once in a while so they don't burn.
add salt/pep to taste
put over the couscous
